In the state of Indiana, Scot spends most of his time trying new foods (and overindulging, especially in the tried-and-true), where there seems to be a hub of phenomenal chefs and cuisines. Although he loves to throw down with line cooks, what interests him more are the staff who make direct contact with patrons. Scot has devoted himself to growing and learning, always.
